简介
茶氨酸(l -茶氨酸)是茶叶中一种独特的游离氨基酸,茶氨酸是谷氨酸γ-乙基酰胺。茶氨酸含量因茶的种类和产地而异。茶氨酸占干茶的1% ~ 2%。茶氨酸是一种白色针状物质,可溶于水。具有甘甜爽口的味道,是茶的味道成分。
